- In a large skillet over high heat, cook the beef steak in batches until browned on both sides, about 2 minutes per side. Transfer to a plate and keep warm.
- In the same skillet over medium-high heat, add more oil if needed and cook the bell peppers, onion and garlic until soft and slightly charred, about 15 minutes, stirring occasionally.
- Add the tomato purée and bring to a boil. Reduce the heat and simmer until slightly thickened, about 10 minutes.
- Return the beef steak to the skillet and toss to coat with the sauce. Cook until heated through, about 5 minutes.
- Serve over basmati rice or couscous and garnish with more cilantro if desired.
